Once in a while a TV show comes along that is perfect. Just the right amount of funny, drama, and wonderfully created characters. One such perfect show is AppleTV’s Ted Lasso, with characters like Ted, Roy, Keeley and Rebecca who are all so different and yet so lovable. Ted’s kindness flows from the beginning and with the first batch of biscuits he shares with Rebecca, he starts to worm his way into her heart. If you’ve seen the show, you’ve seen Rebecca’s reactions when she gets those delicious biscuits from Ted. So if you’re anything like me, I’m sure you’ve wondered, “What are those biscuits really like…?”

Well a few months ago we all got very lucky when Apple TV released a book with Ted’s recipe! As soon as I saw it, I knew I had to try them. These treats are a wonderfully short cookie that is just the right amount of sweet and salty. They definitely fall into the short bread category. I thoroughly enjoyed them. I think they would also be nice with a tiny bit of jam spread over the top for a very different but just as delicious treat. Enjoy!

Ted Lasso Biscuits

Ingredients
  

  • 2 cups All Purpose Flour
  • 1 cup Salted Butter
  • 3/4 cup Confectioners Sugar

Instructions
 

  • Sift flour and salt. Mix together in a bowl and set aside.
  • Mix butter on high speed until fluffy (approx. 3-5 min).
  • Gradually add confectioners' sugar to the butter and continue to mix until pale and fluffy.
  • Add flour and salt mixture to the butter and sugar until combined.
  • Butter a square pan. Then pat the shortbread into the pan so it is no more than ½ inch thick.
  • Refrigerate for at least 30 minutes.
  • Preheat oven to 300°F.
  • Cut into squares.
  • Bake until golden and make sure the middle is firm (approx. 45-60 minutes).
  • Cool completely and enjoy!

Notes

The original recipe calls for unsalted butter and 1/4t of salt. But I only ever buy salted butter, so the conversion was close enough.
I used a Kitchenaid mixer, but a hand mixer would probably work as well.
I cut mine into rectangles to be a little more authentic to the show!
In my oven, the biscuits took 55 minutes to cook and I probably could have gone for the full 60 minutes.
