It is always so frustrating when decorating to run out of frosting at the last minute before the cake or cookies are done! You just know you will never get that color to match just right! This has happened to us more times than we would like to admit. So, in our humble opinion, It’s always better to make more frosting than you will need! “BUT” I hear you say; “we don’t want to waste good frosting!” We totally agree and once you find out what we do with our extra frosting you will never think twice about mixing up extra for your cake or cookie decorating project again!
Be sure to check out our legendary family buttercream recipe, passed down from our great-grandma Hilda! It’s worthy! I typically make this frosting to go on our family sugar cookie recipe, but we also use the same frosting on our favorite cake as well!

So what is it we do exactly? Well its pretty simple. We spread/squeeze it in between two graham crackers and let it sit for a few hours so the crackers get a little soft and chewy!
Yup, that is it! We make a frosting sandwich and it is delicious!! It doesn’t have to look pretty, it uses up all your extra frosting AND it is very tasty! I grew up taking these with my lunch in lieu of cookies, usually after my mom had made holiday sugar cookies or a festive cake. It is something everyone in our family looks forward to.

You can use this trick with any of our Buttercream Frosting recipes: Original, Chocolate, Fruity. They are all wonderful to eat this way! They get better with time as the butter from the frosting soaks into the graham crackers and makes them soft and oh so tasty.

They are perfect for throwing in a kids lunch, snacking on during movie night or with a nice cup of afternoon tea!

You can also freeze these little sandwiches. They stack nicely in a bag or Tupperware, and last up to 6 months in your freezer (1 year if you aren’t storing them next to frozen fish :P)
